
White Bean Sauce
A nutritious change of pace your whole family will love.
2 cloves garlic, thinly sliced
2 tbsp. olive oil
1/2 cup finely chopped onion
1/2 cup finely chopped pepperoni
1/2 lb. sweet Italian sausage, casing removed
1 can (28 oz.) crushed tomatoes
1 large can (16-19 oz.) white beans, rinsed & well drained
1/2 cup water
1/3 cup minced fresh parsley leaves
In large skillet, cook garlic in oil until golden. Remove and discard. Add onion, pepperoni and sausage. Cook over medium heat until onion is soft and sausage is browned, stirring to crumble sausage. Add tomatoes, beans and water. Bring to a boil. Reduce heat and simmer 40 to 45 minutes, stirring occasionally until thickened. Stir in parsley.
