1 lb. sweet Italian sausage, casing removed
3/4 cup raisins
1 1/2 tsp. ground cumin
1/2 tsp. ground cinnamon
generous dash red pepper
2 cans (8 oz. each) tomato sauce*
In large skillet, over medium heat, brown sausage, stirring
to crumble meat. Drain off fat. Add remaining ingredients. Cook over low
heat 15 to 20 minutes, stirring occasionally.
*For baked products, such as manicotti and stuffed shells,
increase to 3 cans.
